Pointed Cabbage Stamp

Ingredients

  • 1 piece Cabbage
  • 500 g Krilletjes
  • 20 g Bacon butter
  • 2 tsp Caraway seed
  • 1 tbsp Mascarpone
  • 1 Pc. Egg
  • Freshly grated nutmeg
  • Salt
  • Pepper from the grinder

Instructions

  • Put krilletjes in a steamer and steam until cooked. In the meantime, quarter the pointed cabbage, remove the stalk and cut into fine strips. Heat a pan with a little sunflower oil, add a little caraway seeds to the pointed cabbage strips and bake until it has a nice golden brown color. Season with a little salt & pepper from the mill. Add bacon butter and a touch of freshly grated nutmeg.
  • Krilletjes don't take long to cook, that means we can go one step further and mash the krilletjes, add a little mascarone and an egg yolk, mix and then add to the pointed cabbage. or underscore.
