The steak should be at room temperature.
Preheat the oven to 90 °.
Rub the meat with 1 tablespoon of olive oil and place in a baking dish.
Leave to stand in the middle of the oven for 90 minutes.
The meat should have a core temperature of 50 - 55 °.
Heat the pan, add the olive oil.
Fry for 2 minutes on each side.
Then season with salt and pepper.
The meat stays super juicy.
Broccoli, carrots and vegetables were enough for us
