Juicy Apple Pie with Tiger Nuts

- 2 Pc. Big apples
- 1 tbsp Lemon juice
- 120 g Spelt flour type 630
- 80 g Ground Tigernuts
- 3 drops Bitter Almond Flavoring
- 80 g Raw cane sugar
- 80 ml Melted coconut oil
- 100 g Applesauce or quince sauce
- 3 tsp Tartar baking powder
- 1 tsp Cinnamon
- 100 g Almond milk
- 1 Msp Vanilla powder
- 2 tbsp Raisins as desired
Dice the apples, drizzle with lemon juice and set aside. For the dough, mix all the ingredients together to form a smooth mass. Fold in the apple cubes with the raisins. Pour the dough into a springform pan (approx. 22 - 24 cm in diameter) that has been greased and dusted with flour and bake in the preheated oven at 170 degrees top / bottom heat on the middle rack for about 45 - 50 minutes.
The cake tastes delicious warm and cold. It goes well warm as a dessert with a scoop of vanilla ice cream.
