First mix the yoghurt, quark and cream in a bowl until the desired consistency is achieved - if it is too firm, just add a little cream, if it is too runny add a little quark.
Now cut the cucumber in half and remove the core. Then grate the cucumber on a grater or cut it very, very finely and let it drain briefly in a colander; then add to the quark-yoghurt-cream mixture and stir in.
If you want the tzatziki with garlic, finely chop the cloves, 1-2 pieces, depending on your taste, until it has a mushy consistency (can also be made in a blender) and add to the mixture.
Add the spices to taste - try again and again. In the variant without garlic, the proportion of chilli must be slightly higher.
In the best case scenario, let everything steep overnight and garnish with some fresh chives before serving.
