Pieces of Salmon in Warm Oil

Ingredients

  • 25 Pieces of salmon
  • 2 Sesame
  • Spring onions
  • 6 Olive oil
  • Old balsamic vinegar

Instructions

  • Heat the oil to 120 C. It must not start smoking. Check the salmon for bones. Cut into small, not too large pieces and garnish individually on the later plate. Heat the sesame seeds without oil. Cut the leek into fine strips. Spread the warmed oil over the salmon. Scatter the sesame and leek over the top. The salmon should now turn slightly white at the edge. The cooking process has started; the protein comes out. Drizzle drops of balsamic vinegar into the spaces in between. Thanks to Vitali from La Terrazza from Hamburg
