Lime and Apple Parfait on Grilled Whiskey Crumble with Meringue and Mint
Servings: 5 people
For the parfait:
- 1 cups Yogurt 3.5% fat
- 1 cups Sour cream
- 2 cups Cream
- 3 Pc. Egg yolk
- 1 Pc. Pressed lime
- 1 Pc. Lime zest
- 2 Pc. Boskoop
- 200 g Brown sugar
- 200 g Sugar
- 100 g Butter
For the crumble:
- 125 g Butter
- 125 g Sugar
- 200 g Flour
- 1 Pr Salt
- 1 shot Whiskey
For the "Mirrorglaze":
- 1 Do. Sweetened condensed milk
- 3 tbsp Sugar syrup
- 1,5 packet Chocolate white
For the meringue:
- 3 Pc. Egg Whites
- Sugar syrup
For the parfait:
Beat the egg yolks over a hot water bath.
Whip the cream until stiff, mix the yogurt and sour cream with the lime juice and zest.
Then fold in the cream and egg and season with sugar, set aside.
In the meantime, chop the apples and let them caramelize with the sugar and butter in a pan.
After caramelizing, fill the desired shapes with the yoghurt cream and put the apple compote in the center as a core. Place in the freezer for several hours.
For the crumble:
Make a crumble out of the butter, flour, sugar, salt and whiskey and place in a metal baking pan, then bake it on the grill.
