Sweet and Sour Baked Chicken, Just Like in Restaurant

Ingredients

  • 500 g Chicken breast fillets (or one piece of fillet per person)
  • 250 g Wheat flour
  • 2 tbsp Food starch
  • 2 tbsp Neutral oil, e.g. sunflower oil
  • 2 tsp Baking powder
  • 300 ml Cold water
  • 1 tsp Salt, pepper, soy sauce (per fillet piece)
  • 1 small Can of pineapple pieces
  • 160 ml Pineapple juice (canned pineapple pieces)
  • 4 large Red peppers
  • 2 small Onions
  • 14 tbsp Apple Cider Vinegar
  • 8 tbsp Sugar
  • 2 tsp Salt
  • 4 tbsp Tomato ketchup
  • 4 tbsp Soy sauce
  • 4 tbsp Neutral oil, e.g. sunflower oil
  • 4 tbsp Food starch
  • 125 g Rice, uncooked, weighed (amount per person)

Instructions

Preparation:

  • First, the onions and peppers are cut into strips and sautéed. The pineapple pieces are briefly seared. Then apple cider vinegar, sugar, salt, ketchup, soy sauce and oil are mixed together and briefly boiled with the fried peppers and onion strips as well as the fried pineapple pieces. When the sauce is boiled, the pineapple juice is mixed with the 4 tablespoons of cornstarch and added to the sauce. Bring to the boil again briefly and set aside. Now the chicken breast fillet is washed and seasoned with salt, pepper and a little soy sauce. Now the batter is made. To do this, flour, cornstarch, baking powder, oil and water are mixed together to form a smooth dough. The chicken breast fillets are placed one after the other in the batter until they are completely coated. (It is best to use a separate container for each fillet.)
  • The fillets in batter only have to be fried in a wok or in a saucepan with oil. It is important to ensure that the meat is completely covered with oil; if too little oil is used, the breading can stick to the bottom and peel off. Preparation in the deep fryer is also not recommended as it can stick to the grid (own experience!). While the meat is being fried, the rice can be prepared and the sauce briefly warmed up again. Then the rice, the chicken breast fillets (best cut lengthways into strips before serving) and the sauce are arranged on plates and served. Good Appetite!
