Sweet Potato Salad with Feta Cheese and Cherry Tomatoes

- 2 size Sweet potatoes
- 2 size Lead onions
- 5 Poles Celery
- 200 g Feta
- 150 g Cherry tomatoes
- Peanuts (optional)
- 1 tablespoon Mustard
- 2 tablespoon Vinegar
- 2 tablespoon Honey
- 5 tablespoon Oil
- Salt and pepper
Peel the sweet potatoes and cut them into medium-sized cubes. Sprinkle with 3 tablespoons of oil and 2 teaspoons of salt and mix well. Then place on a baking sheet lined with baking paper and place in the oven at 180 degrees for 20-25 minutes. Then let cool down a bit.
Meanwhile, cut the feta into cubes, cut the spring onions and celery into rings, wash and quarter the tomatoes and put everything in a large salad bowl.
For the dressing, mix 2 tablespoons of oil with the vinegar, honey, mustard and a little salt and pepper and stir well.
Then add the slightly cooled sweet potatoes to the vegetables and cheese in the salad bowl and add the dressing. Mix everything well and sprinkle with a few peanuts. Good Appetite!
