For the pre-dough
- 200 g Flour
- 1 tbsp Sugar
- 250 ml Milk lukewarm
- 1 cube Yeast

- 150 g Sugar
- 4 Egg yolk
- 1 tbsp Rum
- 100 g Butter
- 1 pinch Salt
- 0,5 Freshly grated organic lemon peel

Mix the ingredients for the pre-dough together well and cover and leave to stand in a warm place for 15 minutes.
Add the remaining ingredients to the pre-dough, knead everything into a smooth dough and cover and let rise for 30 minutes.
Roll out the dough and cut out circles. Let rest for 30 minutes. In the meantime, heat the fat in a large roasting pan with a glass lid or wok and then place the dough pieces in the hot frying fat (approx. 160 ° C) in portions, placing them upside down in the fat. Put on the lid and bake for approx. 3 1/2 minutes. After this time turn the donut over and bake for another 3 1/2 minutes without a lid.
Drain the baked donuts on kitchen paper and then fill with jam as desired. Dust with powdered sugar and then just bite into it ...
