Yeast Dumplings with Orange Sauce

Ingredients
 

  • 500 g Flour type 405
  • 1 packet Fresh yeast
  • 250 ml Milk
  • 1 Egg
  • 50 g Liquid butter
  • 4 Oranges
  • 0,5 tsp Chili
  • 1 packet Vanilla sugar
  • 2 tbsp Sago
  • 2 tbsp Sugar
  • 1 pinch Salt

Instructions
 

  • Put the sifted flour, the sugar and the pinch of salt in a mixing bowl, heat the milk and dissolve the yeast in it. Add the yeast milk and knead well with the dough hook for about 5 minutes until the dough loosens from the edge of the bowl. Cover and let rise in the oven at approx. 50 degrees for about 30 minutes. Divide the dough into pieces of equal size and lay out on a wire rack lined with a cloth, cover and let rest for another 10 minutes. In the meantime, slide the frying pan into the oven and fill it with approx. 2 - 3 liters of water. Preheat the oven to 200 degrees so that water vapor is formed. Then turn the stove down to 150 degrees and slide in the wire rack with the dumplings. Cooking time approx. 15-20 minutes. Halve 3 oranges and squeeze the juice in a saucepan. Peel an orange and cut into fillets. Bring the juice to the boil with water, vanilla sugar and sugar. Set the flame to the lowest setting and let the sago trickle in. Let it swell for approx. 20 minutes. Then put the fillets in the orange juice, add the chilli and let it steep. Serve everything and "Bon appetit"
