Zucchini and Tomato Omelette

The perfect zucchini and tomato omelette recipe with a picture and simple step-by-step instructions.

  • 1 small Zucchini green
  • 5 Cherry tomatoes
  • 1 tsp Herbs of Provence
  • Salt
  • 2 Eggs
  • 1 tbsp Rapeseed oil
  1. Wash the zucchini, cut off the flower base, halve lengthways and cut into slices. Wash and quarter the tomatoes.
  2. Fry the zucchini in the oil, add the tomatoes, braise briefly and season with the herbs and salt.
  3. Beat the eggs, whisk and pour over the vegetables. With the lid closed, let it set at medium temperature.
  4. A farmer’s bread (I ate protein bread with it) makes a delicious dinner.
