Zucchini and Tomato Omelette
The perfect zucchini and tomato omelette recipe with a picture and simple step-by-step instructions.
- 1 small Zucchini green
- 5 Cherry tomatoes
- 1 tsp Herbs of Provence
- Salt
- 2 Eggs
- 1 tbsp Rapeseed oil
- Wash the zucchini, cut off the flower base, halve lengthways and cut into slices. Wash and quarter the tomatoes.
- Fry the zucchini in the oil, add the tomatoes, braise briefly and season with the herbs and salt.
- Beat the eggs, whisk and pour over the vegetables. With the lid closed, let it set at medium temperature.
- A farmer’s bread (I ate protein bread with it) makes a delicious dinner.
