Ingredients for 1 servings:

  • 500 g flour
  • 30 g yeast
  • 250 ml milk
  • 150 g sugar
  • 1 pinch of salt
  • 1 tbsp lemon peel, untreated, grated
  • 60 g margarine
  • 1 egg(s)
  • Oil (sunflower oil) for frying
  • 125 g jam for filling

Working time approx. 30 minutes; Total time approx. 30 minutes

for the carnival season, makes about 16 pieces

Sift the flour and make a well in the dough. Crumble in the yeast, mix with a little lukewarm milk and 1 teaspoon of sugar, and let it rest for 15 minutes. Knead with the remaining milk, 40g of sugar, salt, lemon zest, melted margarine, and egg, and let it rest for 20 minutes. Form a thick roll of dough, divide into 16 pieces, and shape into doughnuts. Heat a sufficient amount of oil in a deep fryer to 170°C. Bake the doughnuts uncovered for 3 minutes, then drain. Drain on kitchen paper. Using a piping bag fitted with a long nozzle, pipe the jam into the doughnuts and roll them in the remaining sugar.
