Spicy cucumber salad

Ingredients for 10 servings:

  • 1 onion(s), red
  • 200 g peanuts, unsalted roasted
  • 1 bunch coriander (alternatively parsley)
  • 3 garlic cloves
  • 2 chili peppers
  • 1 tbsp oil
  • 3 cucumbers
  • 3 tbsp vinegar (rice vinegar)
  • 3 tsp sugar
  • 2 tbsp chili sauce, sweet and sour
  • 1 tbsp fish sauce

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

adds a little extra spice to the salad

Finely dice the onion. Roughly chop the coriander. Chop the peanuts and slice the garlic. Halve the chili pepper lengthwise and slice into strips. Heat the oil and fry the garlic, then remove. Halve the cucumbers and cut into pieces. Mix the vinegar with the sugar and chili sauce until the sugar has dissolved. Combine the dressing with the cucumbers and onion and chill. Just before serving, stir in the peanuts, garlic, chilies, coriander, and fish sauce to the cucumbers.
