Witty's curry sauce for currywurst

Ingredients for 1 servings:

  • 6 g ginger
  • 1 m.-large shallot(s)
  • some fat for sautéing
  • 400 ml tomatoes, pureed
  • 6 tbsp applesauce, mango sauce or apple-mango sauce
  • 1 tbsp white wine vinegar
  • 1 tbsp, heaped sugar, brown
  • 3 pinches of salt
  • 5 tsp, heaped curry powder
  • 3 tsp, heaped paprika powder, sweet
  • ½ tsp Worcestershire sauce, more if desired
  • 2 dashes of Tabasco
  • e.g. cayenne pepper
  • n. B. garlic clove(s)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Finely chop the ginger and shallot and sauté in a little fat in a saucepan. Add the passata and applesauce and bring the sauce to a boil. When it starts to simmer, add the curry powder and paprika. Gently season the sauce with Worcestershire sauce, Tabasco, sugar, salt, cayenne pepper, and white wine vinegar. Cook briefly and then transfer to a sterilized (boiled) mason jar or an empty, sterilized ketchup bottle. If you like, you can also add some freshly squeezed garlic for a more rounded flavor.
