Pasta sauce with vegetables and bacon

Ingredients for 2 servings:

  • 1 large zucchini
  • 3 bell peppers
  • 200 g bacon cubes
  • 1 large onion(s)
  • 5 mushrooms
  • 500 g tomatoes, pureed
  • Herbs, Italian
  • 1 tbsp tomato paste
  • Vegetable stock powder

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Peel the onion and dice it into small cubes. Wash, trim, and slice the peppers, mushrooms, and zucchini. Sauté the bacon and onions. Add the vegetables and fry briefly. Add the tomato paste and fry briefly. Add the passata, a little water, and some vegetable stock powder. Season with pepper, salt, and Italian herbs. Simmer for a few minutes until the vegetables are al dente or cooked to your liking. Serve with pasta and Parmesan cheese.
