Pumpkin in mustard cream

Ingredients for 4 servings:

  • 500 g pumpkin flesh (Hokkaido is best)
  • 1 tbsp butter
  • 1 cup(s) vegetable broth
  • 1 tbsp mustard
  • ½ tsp honey
  • salt and pepper
  • 1 cup of sweet cream

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Chop the pumpkin flesh into small pieces, fry briefly in hot butter, and add vegetable stock. Simmer for 5 minutes. Season with mustard, honey, salt, and pepper, add the cream, and simmer for another 5 to 10 minutes. This can be served as a sauce with pasta, or diluted with water or vegetable stock, added to rice, seasoned to taste, and enjoyed as a soup.
