Ingredients for 1 servings:

  • 300 g flour (all-purpose flour)
  • 200 g butter, not too soft, cut into pieces
  • 100 g sugar, or powdered sugar
  • 100 g hemp seeds (organic peeled hemp), alternatively grated almonds
  • 2 egg yolks
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 1 pinch of cinnamon
  • 1 half lemon(s), grated peel
  • powdered sugar
  • Currant jam

Instructions

Working time approx. 2 hours; Rest time approx. 2 days 30 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 2 days 2 hours 42 minutes

Mix flour, sugar, hemp seeds, salt, and cinnamon in a mixing bowl. Add the butter pieces and mix quickly by hand or with a dough hook. Then add the egg yolks and knead everything into a smooth dough. Place in the refrigerator for 30-45 minutes to rest. Preheat oven to 180°C (without fan). Line 2 baking sheets with baking paper. Quickly roll out the chilled dough on a floured board to a thickness of about 5 mm and cut out using any cookie cutter. Bake the cookies for at least 10 minutes at 180°C (350°F), checking that they do not brown. Then let cool. For the button cookies, spread the bottom half with sour jam, such as currant or cranberry, and stick the holes together. Sift over with powdered sugar, if desired. Place the cookies in a tin, separating them with baking paper, and let them rest in a cool, dark place for a few days. These cookies are simple and not too sweet. This brings out the pleasant nutty taste of the peeled hemp.
