Plum soup with flour dumplings, Grandma Thea’s Best
For the soup, cook all the ingredients, taking care not to overcook the plums. For the flour dumplings, mix the flour with the eggs and enough water to form a very thick batter that falls in long “cones” from the spoon when lifted. It shouldn’t be so runny that it runs, but it shouldn’t be lumpy or crumbly either. Once the plum soup has boiled and seasoned, take a tablespoonful of batter at a time and repeatedly spread small blobs (= dumplings) into the hot soup. Do this as quickly as possible until all the batter is used up. Now let everything simmer over low heat for about 5-10 minutes; do not allow it to boil briskly. Then serve the soup to the table.
