Smokey's chicken salad with strawberries

Ingredients for 2 servings:

  • 2 chicken breasts
  • 400 ml broth
  • 8 strawberries, halved or quartered depending on size
  • 1 tbsp peppercorns, pink, whole
  • 1 handful of basil, cut into coarse strips
  • 4 tbsp natural yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp ketchup
  • 1 tbsp Balsamic vinegar, white
  • 1 tbsp olive oil
  • 1 tsp green pepper, coarsely crushed
  • Salt and pepper from the mill

Instructions

Working time approx. 10 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

light summer meal

Let the chicken breasts simmer in the hot broth for about 15 minutes; do not boil. Remove from heat and let cool in the broth. For the dressing, mix all ingredients well. Drain the chicken breasts, cut into bite-sized pieces, and toss with the dressing. Fold in the strawberries, basil, and pink peppercorns.
