Ingredients for 2 servings:
- 6 green olives, hot pickled
- 3 cloves garlic
- 8 tomatoes (juice), dried
- 6 tbsp flat-leaf parsley, finely chopped
- ½ onion(s)
- Sea salt
- some pepper
- 5 tbsp olive oil
- 1 dash of lemon juice or lime juice
Instructions
Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes
with garlic, olives and dried tomatoes
Chop all ingredients finely (this also works well in a food processor) and mix, then let it marinate. The quantities vary, of course; you can certainly use less garlic, especially if you prefer. If you can’t find dried tomatoes, you can also use regular dried ones, but they should be soaked in water before further processing.
