Leek Cheese Cake

Ingredients for 4 servings:

  • 260 g flour
  • 125 g margarine
  • 1 onion(s)
  • 1 tbsp oil
  • 1 small leek(s)
  • 300 g cheese, e.g. Gouda, Emmental
  • 2 eggs
  • 125 ml milk
  • 100 g cream
  • Salt and pepper cayenne pepper
  • nutmeg
  • Cayenne pepper
  • 2 tbsp sunflower seeds
  • 3 tbsp water, cold

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

Place 250g of flour on a baking board and make a well in the center. Cut the margarine into small pieces and spread it over the flour. Add the water and chop thoroughly with a knife. Knead the mixture into a dough and let it rest in the refrigerator for about 1 hour. Finely chop the onion, fry it in oil until translucent, and season with cayenne pepper. Slice the leek, coarsely grate the cheese, and mix everything together. Add the eggs, milk, the remaining 10g of flour, and the cream. Season with salt, pepper, and nutmeg. Mix everything well. Roll out the dough, place it in a greased dish, and prick it several times with a fork. Preheat the oven to 200°C (400°F) for about 10 minutes. Spread the topping over the dough and bake for another 20 minutes. Sprinkle with sunflower seeds and bake for about 10-15 minutes. Serve warm or cold.
