Potato cubes with Leberkäse and thyme

Ingredients for 1 servings:

  • 300 g potatoes, peeled, diced
  • 100 g Leberkäse, diced
  • 1 onion(s), peeled, diced
  • Margarine or sunflower oil
  • Salt and pepper, white
  • some paprika powder
  • Thyme, shredded or fresh
  • Parsley, chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 50 minutes

Heat the margarine or oil in a pan and sauté the onion until lightly browned. Add the diced Leberkäse (liver sausage) and fry for 5 minutes. Remove both from the pan and set aside. Add the potatoes, not too large, to the pan and fry over medium heat for about 20-30 minutes, turning regularly, until they are nice and soft on the inside and crispy on the outside. About 10 minutes before the end of the frying time, add salt, pepper, paprika, and thyme, along with the onion and Leberkäse, and stir in. Season to taste at the end and adjust the seasoning if necessary. Serve the potato cubes sprinkled with parsley. A hearty side dish for two. Serve with a boiled or fried egg for a main course.
