Ingredients for 9 servings:

  • 200 g wheat flour, light (e.g. 550) or spelt flour (e.g. 630)
  • 120 g sugar
  • 3 tbsp cocoa powder, dark baking cocoa, possibly also 4 tbsp
  • 2 tsp baking powder
  • 1 pinch of salt
  • e.g. vanilla powder or orange peel
  • 150 g butter, soft
  • 3 eggs
  • 150 ml milk

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Quickly mixed as an all-in-one batter; for the 9-piece mini loaf baking pan *; can also be baked with cherries, chocolate pieces, etc. in the batter

* My 9-bread mini-loaf pan measures approximately 20×30 cm, 3 cm high – the individual loaves are just under 9×6 cm. Preheat oven to approximately 180°C (top/bottom heat). Combine flour, sugar, cocoa powder, baking powder, and spices in a mixing bowl. Add softened butter, eggs, and milk and mix everything well until you have a smooth batter. Divide this into the 9 wells of the pan and then bake the cakes for about 20 minutes (test with a toothpick!). If you like, you can stir chocolate pieces, chopped nuts, or something similar into the batter – or add well-drained cherries, apple pieces, or something similar to the batter before baking. After baking, you can dust the cakes with powdered sugar or cover them with chocolate glaze or decorate them. These little cakes are also delicious and moist on their own.
