Ingredients for 2 servings:
- 150 g leaf spinach
- 4 eggs
- 300 g goat’s cheese
- 1 bunch tarragon
- 400 g peas, frozen or fresh
- salt and pepper
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes
Preheat the oven to 200°C (top/bottom heat). Line a tart pan with moistened baking paper. In a bowl, combine the goat’s cheese, peas, and the trimmed spinach with the chopped tarragon and eggs. Season with salt and pepper. Pour the mixture into the pan and press down lightly. Bake in the preheated oven on the middle rack for about 25 minutes. Approximately 260 kcal per serving.
