Ingredients for 2 servings:

  • 1 cup buckwheat, soaked for 10 minutes or oatmeal if you need it quickly
  • 1 cup soy milk (soy drink) or other plant milk
  • 2 bananas
  • 1 tsp cinnamon or cocoa
  • 1 tsp agave syrup
  • 2 tsp chia seeds, soaked, optional
  • Oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

super easy, cheap and delicious – only a few ingredients

Combine all ingredients, except the oil, in a small food processor and blend (I use a Russell Hobbes stand mixer). Meanwhile, place the pan on the stovetop and add a little oil for frying. Once everything has become creamy, stir and shake well again, then gradually add a portion of the mixture directly from the mixer to the pan. Then cook until the pancakes smell delicious and are well browned. You’ll make about 6 pancakes.
