Tomato salad with mozzarella sticks

Ingredients for 2 servings:

  • 450 g tomatoes
  • 1 small onion(s)
  • ½ bunch parsley, flat
  • 2 tbsp vinegar
  • salt and pepper
  • ½ tsp sugar
  • 2 balls of mozzarella
  • 4 tbsp flour
  • 200 g breadcrumbs
  • 1 tsp salt
  • 500 ml oil, neutral (for frying)
  • 3 eggs

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Roughly dice the tomatoes. Finely dice the onion and roughly chop the parsley. Mix the vinegar with the oil, salt, pepper, and sugar. Stir in the tomatoes, onion, and parsley. Cut the mozzarella into not-too-thin sticks. Place the flour, eggs, and breadcrumbs in separate bowls and season the breadcrumbs with a little salt. Coat the mozzarella sticks first in flour, then in the egg, and then in the breadcrumbs. It’s best to repeat this process, as otherwise the cheese will leak out during frying. Heat the oil in a small saucepan to 160-170°C and fry the breaded mozzarella sticks until golden brown. Drain on kitchen paper and serve warm with the tomato salad.
