Zucchini and carrot noodles

Ingredients for 2 servings:

  • 1 onion(s)
  • 2 slices of ham
  • 2 carrots
  • 100 g zucchini
  • 1 slice(s) Gouda light
  • 3 tbsp herb cream cheese
  • 1 ½ tbsp vegetable broth
  • 100 ml water, warm
  • oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Peel the zucchini and carrots. Then cut into strips with a peeler. Peel the onion and cut into strips (not cubes) and fry in a pan with oil. Cut the ham into strips and halve them once, add them to the pan with the onion and fry briefly. Then add the carrots and zucchini and fry everything together. Cut the cheese into strips. Dissolve the vegetable stock in warm water and mix with the herb cream cheese. Once the vegetables and ham are cooked enough, deglaze the mixture with the herb cream cheese broth. Immediately add the cheese, stir in, and let everything simmer briefly. If desired, you can eat it with pasta or rice, but it is also delicious on its own. 230 kcal per serving.
