Muffins with Raffaello chocolates

Ingredients for 1 servings:

  • 150 g flour
  • 150 g sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 30 g almonds, chopped
  • 180 ml vegetable oil
  • 120 ml buttermilk
  • 1 egg(s)
  • 1 tsp vanilla extract
  • 24 Pralines (Raffaello)
  • 100 g white chocolate
  • 115 g butter, soft
  • 100 g powdered sugar
  • 100 g cream cheese
  • ½ tsp vanilla extract
  • 1 pinch of salt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Almond dough with coconut pralines

For 12 pieces, preheat oven to 180 degrees Celsius. Mix sugar, flour, baking powder, salt, and almonds in a bowl. In a second bowl, combine oil, egg, vanilla extract, and buttermilk. Then mix with the dry ingredients. Spoon 1 tablespoon of the batter into each muffin cup. Place a Raffaello chocolate in the center. Spread the remaining batter on top so that the cups are 2/3 full. Bake muffins for 15-20 minutes. For the cream, melt the white chocolate and let it cool slightly. Cream butter and powdered sugar. Stir in the vanilla extract, cream cheese, a pinch of salt, and chocolate. Let it cool in the refrigerator. Spread the cream on the muffins using a piping bag and decorate with a Raffaello chocolate.
