Quick mushroom soup with vegetable chips

Ingredients for 2 servings:

  • 800 g mushrooms
  • 2 onions
  • 4 garlic cloves
  • some olive oil
  • 600 ml chicken stock
  • 200 ml cream
  • 2 tbsp lime juice
  • 100 ml white wine
  • Thyme
  • salt and pepper
  • 25 g vegetable chips

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Roughly dice the mushrooms, onion, and garlic. Sauté the onion and garlic in a large pot with olive oil for 3 minutes. Then add 3/4 of the mushrooms and sauté for about 5 minutes, then deglaze with the chicken stock and a splash of white wine. Add the cream, lime juice, and the remaining white wine to the soup and season with thyme, salt, and pepper to taste. Puree and simmer for 10 minutes. Meanwhile, sauté the remaining mushrooms in a little olive oil and then add them to the pureed soup. Ladle the soup into bowls and garnish with the vegetable chips.
