Tuna and oat patties

Ingredients for 3 servings:

  • 2 cans of tuna, in its own juice
  • 100 g oat flakes, coarsely ground
  • 2 egg yolks
  • 5 egg whites
  • 100 g onion(s), diced
  • 100 g bell pepper(s), diced
  • salt and pepper
  • Paprika powder
  • Herbs, e.g. parsley, basil, oregano…
  • Fat, for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

High in protein and convenient for on the go!

Place the two cans of tuna and the water in a large bowl. Use a fork to break the tuna into small pieces. Then add the coarse oat flour and mix well. The oats will absorb the tuna juices well. Now add the finely chopped vegetables and the two egg yolks and mix them together. Beat the 5 egg whites until stiff peaks. Then fold the egg whites into the oatmeal, tuna, and vegetable mixture. Heat a little fat in a pan. Add a large spoonful of the mixture to the pan and spread it out to form a patty about 10 cm wide and 3-4 cm thick. The first patties always turn out strange, but it gets better with time. Don’t overcook the patties, as the egg whites only need to set to hold the tuna together with the oats and vegetables. Lightly grease the pan occasionally. You can combine the vegetables as you like.
