Rösti with Surimi – Quark à la Marlene

Ingredients for 2 servings:

  • 2 large potatoes
  • 1 large apple
  • 1 large onion(s)
  • 1 egg(s)
  • 1 tbsp flour
  • salt and pepper
  • olive oil
  • 1 quark
  • Milk
  • 2 pieces of surimi, finger-sized, alternatively pickled shrimp
  • ½ small onion(s)
  • 1 pinch of garlic granules
  • salt and pepper
  • 1 tbsp parsley, frozen or 1/2 bunch fresh

Working time approx. 30 minutes; Total time approx. 30 minutes

Fresh, crunchy, delicious!

Peel the potatoes and apple, trim the onion, and coarsely grate everything. Add 1 tablespoon of flour, 1 egg, salt, and pepper to the grated cheese and mix well. Mix the quark with a little milk until smooth and season with salt and pepper. Cut the surimi and onion into small cubes and stir into the quark. Mix in the garlic granules and add the parsley. Let it simmer. Add olive oil to a hot pan over medium heat and fry the batter until golden on both sides. Flatten 1 tablespoon of the batter in the pan. Season the quark again and serve with the hot pancakes.
