Ingredients for 2 servings:
- 2 tbsp olive oil
- 2 cloves garlic
- 1 vegetable onion(s)
- 150 g peanuts, unseasoned, ground
- 200 ml cream
- 150 ml vegetable stock
- 1 tsp locust bean gum
- 3 spring onions
- 1 red chili pepper(s)
- salt and pepper
- Cumin powder
- curry powder
- 2 sprigs of parsley or 1 tsp dried parsley
- Garam Masala
- 1 cup rice
- 1 head of broccoli

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Crush the garlic cloves and fry briefly in olive oil. Then add the onions and fry them as well. Briefly fry the ground peanuts, then add the cream and stir until it forms a paste. To prevent it from becoming too thick, add the vegetable stock and stir in. Add all the spices and season well. For extra heat, add the chopped chili pepper to the sauce. If it has become too runny, thicken with the locust bean gum. Add the three finely chopped spring onions and stir well. At the same time, cook the rice and broccoli.
