Crispy pasta salad without meat

Ingredients for 4 servings:

  • 300g penne
  • 1 medium-sized bell pepper powder, red, yellow or green, diced
  • 1 half cucumber(s), washed and diced
  • 1 can of corn
  • 3 medium-sized tomatoes, diced
  • 2 medium-sized eggs, hard-boiled, diced
  • 1 medium-sized onion(s), halved and cut into very thin slices
  • 1 bag of mozzarella, diced
  • 1 bunch chives, finely chopped
  • 5 basil leaves, finely chopped
  • 2 tbsp tomato paste
  • 6 tbsp mayonnaise, more or less to taste
  • 3 tbsp olive oil
  • 1 pack Italian salad seasoning mix
  • salt and pepper
  • Paprika powder
  • Thyme

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 10 minutes; Total time approx. 3 hours 40 minutes

with lots of vegetables and a Mediterranean touch

Cook the pasta in salted water until al dente, drain, and transfer to a large bowl. Add the vegetables, eggs, and cheese to the pasta and mix well. Add the mayonnaise, oil, herbs, tomato paste, and the packet of salad herbs. Season the salad with salt, pepper, paprika, and thyme. It tastes best when it’s been left to marinate for a few hours.
