Ingredients for 1 servings:
- 250 g margarine
- 200 g sugar
- 3 eggs
- 4 egg yolks
- 1 pinch of salt
- 1 packet of vanilla sugar
- 250 g flour
- 1 packet of baking powder
- 1 kg rhubarb, cleaned and chopped
- 200 g sugar
- 4 egg whites
- Grease for the tray
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Prepare a batter with the above ingredients. Spread it evenly on a greased or parchment-lined baking sheet and smooth it out. Top with the rhubarb. Bake in a preheated oven at 180°C (convection oven) for about 35 minutes. In the meantime, beat 4 egg whites until stiff peaks form and slowly add the sugar. The sugar must (!) be completely dissolved. Spread this mixture over the baked cake and bake for another 5-10 minutes (the time depends on the oven).
