Vegan curry sauce

Ingredients for 2 servings:

  • 8 g curry powder
  • 2 tbsp oil
  • 1 onion(s), red
  • 70 g tomato paste
  • 40 g plum jam
  • 100 ml water
  • 5 g vegetable stock powder
  • 35 g ketchup
  • salt and pepper

Instructions

Working time approx. 2 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 14 minutes

Halve the onion, peel it, and dice it very finely. Heat 2 tablespoons of oil in a small saucepan over medium heat and sauté the chopped onion until translucent, 4-6 minutes. Then add the curry powder and tomato paste and sauté together for 1 minute. Prepare water with vegetable stock powder. Deglaze the pan with the prepared vegetable stock, plum jam, and ketchup, and simmer for another 4-5 minutes. Season with salt and pepper.
