Marinated zucchini

Ingredients for 1 servings:

  • 2 kg zucchini
  • 4 bell peppers, red
  • 4 carrots
  • 2 onions, depending on size
  • 2 handfuls of celery leaves, fresh
  • 1 liter vinegar (wine vinegar)
  • ½ liter of water
  • 200 g sugar
  • ½ tbsp spice(s) (pickling spice)
  • 1 tsp turmeric
  • 1 tsp mustard seeds
  • 5 tsp salt

Working time approx. 1 hour; Total time approx. 1 hour

is ideal for zucchini gluts

Dice the zucchini and bell peppers, slice the carrots into approximately 3 mm thick slices, halve the onions and slice them lengthwise into strips. Boil the vegetables with vinegar, water, and spices for about 5-7 minutes. While still hot, pour into jars! Seal the lids and immediately turn them upside down for a few minutes. It tastes delicious and will keep forever in a sealed jar.
