Toasties with vegetable topping

Ingredients for 3 servings:

  • 6 pieces of toast (toasties, e.g. Golden Toasties)
  • 200 g yogurt, Greek, 10% or sheep’s milk yogurt
  • salt and pepper, pepper
  • 1 dashes lemon juice
  • 2 garlic cloves
  • 12 cherry tomatoes
  • ½ cucumber(s)
  • 1 small jar of pitted black olives
  • some pepper, mild or hot, to taste
  • 1 pack of diced ham (Katenschinken)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Press or finely chop the garlic cloves and mix with the yogurt. Season with salt, pepper, and perhaps a little lemon juice. Chill. Peel half the cucumber, cut it in half lengthwise, and scoop out the insides with a small spoon. Cut the cucumber into small cubes. Halve the cherry tomatoes and chop the peppers and olives into small pieces. Fry the ham cubes in a non-stick pan without oil. Arrange everything separately in small bowls on a board. Halve and toast the toasties, then spread them with yogurt at the table. Now everyone can top their toasties with the remaining ingredients as desired. Either as a small starter for several or as a dinner for 2-3 people.
