Ingredients for 3 servings:
- 1 pack of leaf spinach, frozen
- 5 large potatoes
- 2 cups sour cream
- 2 eggs
- 250 g Gouda, grated
- salt and pepper
- nutmeg

Boil the potatoes until soft. If the spinach isn’t thawed yet, or if you’re using fresh spinach, thaw it or blanch it. Put the sour cream in a mixing bowl, add the cheese, beat in the two eggs, and mix everything well. Season with salt, pepper, and nutmeg, and chili or other herbs if desired. I like to add a little Vegeta. Once the potatoes are done, cut them into thick slices and place them in a baking dish, preferably with the skin on. Add the well-drained and squeezed spinach and mix well. Spread the sauce on top and mix thoroughly until the potatoes and spinach are completely coated in the sauce. If you like, you can also stir in some feta cheese. Place in the oven at 180°C (fan oven) for about 20-30 minutes. Optionally, you can grate more cheese over everything.
