Matjes roll with apples and onions

Ingredients for 2 servings:

  • 2 rolls, fresh
  • 1 large onion(s), red
  • 2 tbsp crème fraîche
  • 1 apple
  • a little salad of your choice
  • e.g. balsamic vinegar
  • some sugar
  • 2 large herring fillets

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

quick, easy and very tasty

First, cut open the fresh rolls. Peel the onion and slice it into thick rings. Put a frying pan on the heat. Meanwhile, coat two large onion rings per roll in sugar, add them to the hot pan, and let them caramelize on both sides. Deglaze with a splash of balsamic vinegar and set aside. Cut two or three apple slices and cut them into sticks. Spread 1 tablespoon of crème fraîche on the bottom of each roll, then arrange the lettuce on top. Next, top each roll with a herring fillet, then two onion rings, a few apple sticks, and put the lid on top. Very tasty and quick, and a fish sandwich with a difference.
