Asian stir-fry with chicken and Chinese cabbage

Ingredients for 2 servings:

  • 300 g chicken breast
  • 4 tbsp soy sauce
  • 1 red bell pepper(s)
  • 2 small carrots
  • 200 g Chinese cabbage
  • 2 tbsp oil
  • 60 g pineapple, pieces
  • 1 tsp ketchup
  • 2 tsp desiccated coconut
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour

Chop the meat into small pieces and marinate in the soy sauce for 30 minutes. Meanwhile, wash and dice the bell peppers, peel and dice the carrots. Wash and slice the Chinese cabbage. Drain the pineapple. Brown the meat in oil and add the bell peppers and carrots. Cook for about 5 minutes, then add the Chinese cabbage. Stir in the pineapple and ketchup and season with salt and pepper. Sprinkle with the coconut flakes. Serve with rice.
