Green tomato and ginger jam

Ingredients for 1 servings:

  • 1.6 kg tomatoes, green
  • 800 g sugar
  • 2 pieces of ginger, thumb-sized
  • ½ lime(s), the juice

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 20 minutes

Perfect for the end of summer

Cut the tomatoes into small cubes. Peel the ginger and chop it into small pieces. Combine the lime juice and sugar with all the other ingredients in a heavy-bottomed saucepan and simmer over low heat for one to two hours, stirring occasionally with a wooden spoon. To check if the jam is ready, place a few drops onto a cold plate. If the drops run when you tilt the plate, it’s not ready yet. If the drops don’t run and remain solid, the jam is ready. Pour into sterilized jars, invert, and let cool with the lids on.
