Chicken breast in mango sauce

Ingredients for 4 servings:

  • 400 g chicken breast fillet(s)
  • 1 large mango(s), ripe
  • ½ ml chicken broth
  • 3 tbsp white wine
  • 1 tsp peppercorns, red
  • 2 tbsp natural yogurt
  • ½ lemon(s), the juice
  • some butter or margarine
  • Salt and pepper, freshly ground black

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Halve the mango and cut the nicer half into 8 thin slices. Scrape all the flesh from the rest of the fruit and blend it with white wine, chicken stock, and lemon juice until smooth (a hand blender works great). Fry the chicken breast in butter until evenly browned, season to taste. Pour over the mango sauce and simmer for about 10 minutes. Finally, stir in the red peppercorns and yogurt and heat everything through. Arrange on plates and serve with two mango slices on each. This also tastes delicious with peaches.
