Salmon tartar with a twist…

Cook the lentils according to the package instructions (about 20 minutes); they should not be too soft. Drain, rinse, and drain well. Finely dice the salmon and mix them with the crème fraîche, mayonnaise, wasabi, and chives. Stir in the lentils and season with balsamic vinegar, pepper, and salt. Arrange the tartare on two plates, garnish with 2-3 sprigs of chives, and serve with toasted bread and butter. Tip: This tartare can also be served on small toasted breads as finger food for an aperitif.
