Turkey breast marinated in plum and soy sauce

Ingredients for 2 servings:

  • 400 g turkey breast
  • 1 bell pepper(s), red
  • 1 bunch of spring onions
  • 1 large onion(s)
  • 250 g mushrooms, brown
  • 5 tbsp plum sauce
  • 3 tbsp soy sauce, dark
  • 1 tbsp tomato paste
  • 2 tbsp balsamic vinegar
  • 3 tbsp honey
  • 1 tbsp gravy
  • some oil for frying

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 30 minutes; Total time approx. 4 hours

Cut the turkey breast into bite-sized pieces and marinate in the plum and soy sauce for 3 hours. Chop the bell peppers, onions, and spring onions, and slice the mushrooms. Drain the meat and reserve the marinade. Heat a little oil in a wok or pan until very hot and brown the meat. Remove and set aside. First, brown the onion in the hot oil. Then add the mushrooms, spring onions, and bell peppers. Top up with about 100 ml of water. Add the honey, tomato paste, vinegar, gravy, and marinade and simmer for 10 minutes. Finally, add the meat back in. Serve with rice, of course.
