Potato, zucchini and ham pancakes

Ingredients for 4 servings:

  • 500 g potatoes, waxy
  • 1 m.-large zucchini
  • 1 m.-sized onion(s)
  • 3 eggs
  • 5 tbsp flour
  • 1 tsp, leveled salt
  • 1 pinch(s) of pepper
  • 1 pinch of nutmeg
  • 1 tbsp oat flakes
  • 2 slices of cooked ham (shoulder ham)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Wash the zucchini and coarsely grate it, including the skin. Place the grated zucchini in a sieve to drain any excess liquid. Peel the potatoes and coarsely grate them. Dice the ham slices. Combine the eggs, flour, oats, salt, pepper, and nutmeg. In a large bowl, combine the grated zucchini and potato with the flour and egg mixture. Heat a generous amount of oil in a large pan and fry the mixture in batches. Layer the finished fritters in a baking dish lined with baking paper and place in an oven preheated to 150°C for about 10 minutes. Serve with a yogurt or quark dip.
