Ingredients for 4 servings:
- 250 g noodles (rice noodles)
- 300 g turkey breast
- 4 tbsp oil
- 4 tbsp soy sauce
- 1 ½ bell peppers
- 2 eggs
- 3 tbsp fish sauce
- 1 ½ tbsp sugar
- n. B. water
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Cut the turkey into bite-sized cubes. Place the meat cubes in a deep dish with 1 tablespoon of soy sauce and 1 tablespoon of oil. Cut 1.5 bell peppers (I used all three colors) into small cubes. Bring a pot of water to a boil and cook the rice noodles for 5 minutes. Rinse the noodles with cold water and drain. Heat the remaining oil in a wok or frying pan and fry the turkey cubes. Push the turkey cubes to the side of the pan and scramble the eggs. Mix the scrambled eggs with the turkey cubes, add the bell peppers, and cook for 5 minutes, stirring constantly. Add the noodles, 3 tablespoons of fish sauce, 3 tablespoons of soy sauce, and 1.5 tablespoons of sugar. Mix well and heat until hot, stirring constantly.
