Tarte flambée with red onions, apples or pears and walnut

Ingredients for 4 servings:

  • 500 g wheat flour type 405
  • 6 tbsp olive oil
  • 1 tsp salt
  • 200 ml water, lukewarm
  • 5 onions, red
  • 2 apples or pears
  • 8 dates
  • 400 g crème fraîche
  • 4 egg yolks
  • 4 tbsp walnuts
  • 4 tbsp honey

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 20 minutes

Knead the flour with oil, salt, and water to form a smooth dough. Cover the dough ball in a bowl and let it rest at room temperature for about 30 minutes. Preheat the oven to 200 degrees Celsius. Cut the onions into thin rings or strips, the apples into wedges, the dates into cubes, and roughly chop the walnuts. Place the onions in a bowl, lightly season with salt, and mix well. Divide the dough ball into 4 portions and roll each out thinly with a rolling pin on a floured surface. Mix the crème fraîche with the egg yolks, season with salt and pepper, and spread over the dough. Drain the onions and spread them on the flatbreads along with the apples, dates, and walnuts. Bake in the oven for about 20 minutes. Drizzle the finished tarte flambée with a little honey and serve.
