Ingredients for 4 servings:
- 125 g dried fruits, mixed
- 500 ml water, cold
- 500 g goose meat, cut into bite-sized cubes
- 2 tbsp butter or margarine
- 1 medium-sized onion(s), diced
- 2 tbsp flour
- Marjoram, dried
- Salt
Instructions
Working time approx. 25 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 13 hours 55 minutes
Soak the dried fruit in water, preferably overnight, in a covered bowl. Heat the fat, sear the goose meat on all sides, add the onion, dust with flour, and brown lightly. Then pour in the dried fruit liquid and simmer everything covered over low heat for about 3/4 to 1 hour. Add the dried fruit and simmer for another 30 minutes. Add a little more water if needed. Season the finished ragout with marjoram and salt. Serve with bread dumplings.
