Squid ragout à la Gabi

Ingredients for 4 servings:

  • 750 g squid(s), frozen, thawed, cut into rings
  • 500 g tomatoes, peeled, pitted, diced
  • 1 large onion(s), finely diced
  • 2 cloves garlic, finely diced
  • 4 stalks celery, with leaves finely chopped
  • 1 bunch of flat-leaf parsley, finely chopped
  • 2 tbsp oil
  • 20 g butter
  • 100 ml dry white wine
  • Salt
  • Pepper, white, from the mill
  • 4 sprig(s) thyme, of which the leaves

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Heat the oil and butter in a saucepan and sauté the diced onion, garlic, celery, and parsley, stirring constantly. Now add the squid rings, diced tomatoes, and wine. Season to taste with salt and pepper, cover, and simmer over low heat for about 30 minutes. Adjust seasoning if desired. Sprinkle with the thyme leaves before serving. Serve with bread.
