Ingredients for 1 servings:

  • 60 g woodruff
  • 400 g sugar
  • 1 liter of water
  • 1 lemon(s) (organic)

Instructions

Working time approx. 20 minutes; Rest period approx. 2 days; Cooking/baking time approx. 10 minutes; Total time approx. 2 days 30 minutes

Let 60g of woodruff (about a handful) wilt for about a day to allow its aroma to develop. Boil sugar and water until clear (about 10 minutes) syrup forms. Add the woodruff leaves and lemon slices to the hot syrup and let it steep for 24 hours. Then strain through a sieve to remove the woodruff and lemon slices and pour into clean bottles. Tastes delicious with water or in white wine. It can also be used as an ingredient in punch, desserts, etc. Woodruff has a calming, sleep-inducing effect. Due to its coumarin content, woodruff can cause headaches if consumed in large quantities.
